Pure Shou Mei Tea

White tea is very different from other processes. It is harvested from varietals of Camellia Sinensis called Narcissus or Chaicha. The leaves are not steamed or wok-dried (processes traditionally used for green tea), nor are the leaves fermented or baked (specialized processes for black tea). White tea leaves dry naturally in the sun. In case of requiring heat guards, they must be adjusted to a stable temperature of less than 40 degrees Celcius. Another important attribute of this tea process is that it is always harvested from 3 leaves. Its leaves should be greenish, pale in color and white. These leaves are cut at the end of April, May and June. This Shou Mei (Sowmee) has a strong flavor, similar to young oolongs.
