A Heritage That Crossed the Ocean
The story began in the mid-19th century when the ancestors of Mauricio A. Salaverria emigrated from the Basque Country, in the Pyrenees, to El Salvador. They settled in the mountains of Apaneca, 1,500 meters above sea level, and founded Finca Himalaya.
Today, Mauricio honors that legacy as a sixth-generation producer, keeping alive a tradition that began in the 1870s while injecting a forward-thinking vision that has positioned his farms on the international stage.
Pioneers in the Natural Process
Mauricio and his father were among the first in El Salvador to seriously commit to specialty coffee. Under their guidance, Finca Himalaya achieved a historic milestone: producing the first "Natural" process lot to break into the Top 10 of the country’s Cup of Excellence (CoE).
Since then, the brand has earned the nickname "The Kingdom of Naturals." This mastery is no accident; it is the result of years spent perfecting fermentation and drying techniques that highlight the purity and complexity of varieties such as Bourbon, Pacas, Pacamara, Maragogype, and Yellow Icatu.
