We started buying coffee from Mauricio Salaverría in 2015, a highly experienced producer who closely watches over the production of his coffees. Mauricio is one of the pioneers in the production of fine coffees and as such, his Villagalicia, Himalaya-Divisadero and El Copo farms ring out every year in the Cup of Excellence Contest, which rewards the best coffees in El Salvador.

Mauricio acquires his farms as part of an inheritance, but then he begins to buy more properties from his family and surroundings. Now it has about 300 acres of coffee planted. We are fortunate to be invited annually to his farms and mill, where he very enthusiastically teaches us how he processes his different varieties and the different processes that they lead to storage. Mauricio is able to carry out strict controls from beginning to end in its processes, it has a Wet Mill which runs throughout the season.

Its Himalaya - Divisadero farms are the highest, between 1450 to 1600 meters above sea level. It is there where he plants several microlots of Maracaturra, Pacamara, Bourbon, Typica, Gesha, SL-28 among others and where most of the coffees that we buy him annually come from. Himalaya - Divisadero receive Cup of Excellence awards in 2015 achieving a Top 5 position and continue to win in 2018, 2019.

Villagalicia is located in Concepción de Ataco, Ahuachapan, at 1,300 meters above sea level and won the Cup of Excellence in 2005 and 2007. On this farm he only sows Pacamara, Bourbon and Pacas. Benefit Divisadero is located here, being a key point to slowly dry your coffees at high altitude.

Cruz Gorda el Copo is located in Los Naranjos and has a height of 1350 to 1550 meters above sea level where Bourbon, Pacas and Pacamara are planted. El Copo receives Cup of Excellence awards in 2013 and 2015.

Academia Barista Pro has a stock of envy from all its farms, including an exclusive batch of Cafés Himalaya, Villa Galicia and Divisadero for our most demanding clients.

Thanks to his experience, we have partnered to provide lots of Mauritian coffees exclusively to our clients in El Salvador. Our wholesale customers now have 3 different and delicious options that we have prepared together with Mauricio to roast to specialty Coffee Shops throughout the country.

We began buying Specialty Coffees from Mauricio last year. He is a wellknown producer, with 8 years experience on the field and one who has the reputation to keep a close eye on his farm. Mauricio is one of the first producers to believe in "Specialty Coffees" and knew coffee quality would make a difference in the future of El Salvador. He owns Finca Villa Galicia, Finca Himalaya - Divisadero, and Finca El Copo, all of which have won Top 10 places in COE.

Mauricio inherited his farms and began buying more land from his family and surroundings, now he owns at least 300 acres of land all of which are growing different varieties. He processes his coffee entirely at Divisadero Beneficio.

Himalaya - Divisadero is one of his highest Coffee Farms, located at 1450 to 1600 masl and where all his Specialty Nano and Microlots are: Maracaturra, Pacamara, Bourbon, Typica, Geisha, Sl-28 and many more.
